On this day in 1825, the Thirty-Three Orientals declared independence, hoping to establish a free and sovereign Uruguay after more than three centuries of foreign rule. This declaration led to a 500-day-long struggle until 1828 when the Treaty of Montevideo was passed, and Uruguay was recognized as an independent nation. Two years later on July 18th, Uruguay’s first constitution was signed into law, birthing a new chapter of democracy and unity for the young nation. On Independence Day, Uruguayans attend parades, music concerts, asados , and more with family and friends. People also enjoy Uruguay’s national dish: chivito sandwiches made with churrasco, mozzarella, ham, tomatoes, mayo, and olives.
