On this day in 1821, the Act of Independence of Central America was signed to release several territories and provinces from Spanish rule. El Salvador joined Costa Rica, Guatemala, Honduras, and Nicaragua to create the Federal Republic of Central America. On Independence Day, Salvadorians attend street fairs, musical concerts, dance performances, and more to celebrate national pride. Street vendors serve National Day delicacies like pupusas — hand-made corn pancakes filled with salsa, cheese, jalapeños, and other ingredients. Large parades featuring school marching bands, colorful floats of magnificent design, and costumed performers are also enjoyed in El Salvador’s main cities. To show respect for the other four countries who share the holiday with them, citizens drive down roads in cars decorated with all five national flags. The Salvadorian flag — like the one waving in today’s artwork — takes center stage and can be seen all over; its two blue bands represent the sky and ocean, while the white symbolizes peace and solidarity.
